A fast, healthy stir-fry using tofu and fresh vegetables is a delicious, nutrient-packed dish that’s perfect for a midweek dinner. This quick and easy meal is full of vibrant vegetables, plant-based protein from tofu, and a savory stir-fry sauce that brings everything together.  

Whether you're looking for a light dinner or a satisfying meal packed with flavor, this stir-fry is a go-to option that's both healthy and satisfying. 

To start, press the tofu to remove excess moisture, ensuring it crisps up nicely during cooking. Once drained, cut the tofu into bite-sized cubes. In a large skillet or wok, heat a bit of sesame oil or vegetable oil over medium-high heat. 

Add the tofu and cook it until all sides are golden and crispy, about 5–7 minutes. The crispy texture of the tofu gives a nice contrast to the tender vegetables, adding depth to the dish. 

While the tofu is cooking, prepare the vegetables. You can choose from a variety of colorful, fresh veggies like bell peppers, carrots, broccoli, snap peas, and zucchini.  

Cut them into even-sized pieces to ensure they cook evenly. Fresh vegetables not only add a pop of color but also bring important vitamins and fiber to the meal. 

Once the tofu is crispy, remove it from the pan and set it aside. In the same pan, add a little more oil if needed and sauté the vegetables until they are tender-crisp, about 4–5 minutes. 

For added flavor, you can toss in a small amount of minced garlic, ginger, and a splash of soy sauce or tamari to enhance the savory profile. 

Return the tofu to the pan with the vegetables and stir in a stir-fry sauce made from soy sauce, hoisin sauce, a touch of honey or maple syrup, and a sprinkle of sesame seeds.
